Testa's Famous Recipes
Testa's Cream of Crab
3 lbs fresh lump crabmeat
1/2 cup crab base
2 1/2 chopped onions
4 qts heavy cream
4 qts half & half
2 1/2 tbsp butter
10 drops tobasco
3 cups flour
1 tsp salt
4 stalks celery (minced)
1 tsp white pepper
3 tsp Worchestershire Sauce
3 tsp Old Bay Seasoning

METHOD OF PREPARATION
Sautee onions and celery in butter until tender
Add flour to make roux
Wisk in cream - no lumps
Add remaining ingredients: cook on med. heat until desired thickness

1 1/2 lbs crabmeat to 1 gallon of soup yield
approximately 2 gallons of soup

Testa's Famous Key Lime Pie


1 - 14oz condensed milk
4 egg yolks
4-5 oz Florida Key Lime juice

METHOD OF PREPARATION
Combine milk and egg yolks at low speed in blender
Pour into 9" graham cracker pie shell and refrigerate overnight
-OR- it can be baked at 250 degrees for 12-15 minutes
Top with fresh whipped cream and shredded key lime rhine
